Sofitel Brisbane Central – one of Brisbane’s premier five-star hotels.

Scope of Works:

Complete demolition and reconstruction of the pastry kitchen cool room, designed and built to meet stringent food safety and operational continuity requirements in a live hotel environment.

Project Challenges:

  • Live Operating Environment:
    The pastry kitchen remained operational throughout the build. We coordinated daily with hotel kitchen staff to maintain workflow with zero disruption to service.

  • Dust & Debris Management:
    Special containment measures were implemented to ensure airborne dust, construction debris, and noise were kept to an absolute minimum — critical in a working hospitality kitchen.

  • Complex Coordination:
    The site presented logistical and structural limitations. Precision scheduling and trade coordination were essential to meet the strict timeframe and avoid disrupting hotel operations.

  • Custom Design & Engineering of the new cool room to suit spatial and operational constraints

  • Australian-made insulated panels for food-grade compliance and durability

  • Demolition of the existing cool room structure

  • New concrete flooring, integrated with existing drainage and floor waste systems

  • Installation & commissioning of commercial refrigeration equipment

  • All electrical works handled by our in-house electrical division

  • Food-safe tiling throughout the interior

  • BMS integration for remote monitoring and hotel system compatibility
