Acro Refrigeration replaced the existing pastry room cold room at Sofitel Brisbane, installing new panels, floor, refrigeration equipment and advanced BMS-integrated controls, all while the hotel kitchen remained operational.

The Challenge
The existing pastry room cold room at Sofitel Brisbane had reached end of life and required full replacement. The works had to be carried out inside a fully operational hotel kitchen, with no shutdown of kitchen operations. This created multiple constraints: Continuous operation of kitchen services with no downtime; High pedestrian traffic from staff, contractors and hotel guests; Strict requirements around cleanliness, dust and contamination control; Noise limitations within an active hospitality environment; and Limited access and staging space within the kitchen In addition, the new system needed to integrate with the hotel’s existing Building Management System, adding a layer of technical complexity.
Our Solution
Acro Refrigeration delivered a staged demolition and rebuild approach designed specifically for a live environment. Key elements of our approach: Careful sequencing of demolition and installation to maintain kitchen functionality at all times; Installation of temporary controls and physical barriers to manage dust and protect surrounding areas; Programming of works to minimise noise during critical operating periods; Strict site management to control movement of people and materials through the kitchen; Installation of new insulated panels and a purpose-built cold room floor; Supply and installation of new refrigeration equipment sized for operational demand; Installation of advanced control systems designed for integration with the hotel’s BMS; and Commissioning and testing to ensure seamless system performance and BMS communication
